Darling Cellars: a West Coast Wine Destination

Darling Cellars wines are all about location, location, location, and old, un-irrigated bush vines. In one word: terroir.

A West Coast jewel some 75 kms north of Cape Town, Darling Cellars has the best of both worlds when it comes to terroir. Some of their vineyards enjoy the coolness of the Darling Hills 10 kms from the Atlantic, while others bask in the sun in the flatter surroundings. This gives their winemaking team an abundance of flavour profiles to play with, not to mention an abundance of varieties.

Bush Vines From the Cool West Coast

With unique growing conditions, the dryland vineyards ensure deep-rooted vines and therefore produce wines with an optimal concentration of colour, flavour and tannin structure. 96% of their vineyards are unirrigated bush vines so yields are very low and the quality correspondingly high.

What Nature Intended Grapes to Be

The Darling Cellars’ range is known for its great quality-price ratio, with their wines available in Pick n Pay stores nationwide. As head winemaker Pieter-Niel Rossouw puts it: “What nature gives us each year, we try to get into the bottle with passion and honour. “

Reserve Range: Darling Cellars Reserve is a wine range of straight varietals where the focus is on fruit driven, varietal-true, value-for-money wines. The grapes were harvested from bush vines in dryland-farmed vineyards in Darling. Low yields, small berries and big on taste!

Classic Range: the idea behind the Classic Range is easy-drinking fun wines which are rich in vibrant fruit, display a little bit of complexity, but are never heavy or dull. Wines for all occasions.

MCC: never a fast process, developing this Methodé Cap Classique was no exception to the rule. The Chardonnay grapes were harvested at optimal ripeness for an MCC, a little higher in acidity and not overripe to preserve the natural acidity and have a low alcohol. Secondary fermentation led to the build-up of pressure and infusion of bubbles into the wine, making it a stunning, naturally bottle-fermented, matured on lees MCC.
