
Three-bean salad
Jazz up your traditional bean salad with a touch of basil!
- Serves 4
- Less than 15 minutes
INGREDIENTS
- 1 tub (120g) PnP basil pesto
- ½ cup (125ml) PnP low fat plain yoghurt
- 1 can (400g) PnP Livewell butter beans, drained
- 1 can (400g) PnP Livewell kidney beans, drained
- 1 packet (300g) PnP fine green beans, blanched
- 1 tub (120g) PnP pickled bell peppers, drained
- Handful of PnP fresh basil leaves, for serving
METHOD
- Combine pesto and yoghurt in a large salad bowl.
- Toss in butter and kidney beans and stir to coat.
- Top with green beans, peppers and basil.
- Serve.
