Three-bean salad

Three-bean salad

Jazz up your traditional bean salad with a touch of basil! 

  • Serves 4
  • Less than 15 minutes
 

INGREDIENTS

  • 1 tub (120g) PnP basil pesto
  • ½ cup (125ml) PnP low fat plain yoghurt
  • 1 can (400g) PnP Livewell butter beans, drained
  • 1 can (400g) PnP Livewell kidney beans, drained
  • 1 packet (300g) PnP fine green beans, blanched
  • 1 tub (120g) PnP pickled bell peppers, drained
  • Handful of PnP fresh basil leaves, for serving

METHOD

  1. Combine pesto and yoghurt in a large salad bowl.
  2. Toss in butter and kidney beans and stir to coat.
  3. Top with green beans, peppers and basil.
  4. Serve.
