Sweet potatoes with orange and ginger
(Soetpatats in Afrikaans)
- Serves 10
- More than 1 hour
- Slice the sweet potatoes into thick rounds
- Place them in a casserole dish and pour the caramelised sugar over them
- Squeeze the juice of the orange, and add the orange juice, grated ginger and cassia/cinnamon sticks to the dish.
- Bake in the oven at 180°C for about 60 minutes.
- Flip over sweet potato rounds twice in the first half hour.
