Roasted tomato and garlic bean soup

Baked beans are more than just a breakfast side.

  • More than 1 hour
 

INGREDIENTS

METHOD

  1. Toss tomatoes, garlic and rosemary in a roasting pan with oil.
  2. Roast at 200°C for 45 minutes or until caramelised.
  3. Remove rosemary and tip tomato mixture into a pot.
  4. Add baked beans and stock and simmer for 15 minutes.
  5. Blend until smooth using a stick blender. Season.
  6. Sprinkle with parsley and croutons.
  7. Serve.
