Roasted tomato and garlic bean soup
Baked beans are more than just a breakfast side.
- Serves 4
- More than 1 hour
- Toss tomatoes, garlic and rosemary in a roasting pan with oil.
- Roast at 200°C for 45 minutes or until caramelised.
- Remove rosemary and tip tomato mixture into a pot.
- Add baked beans and stock and simmer for 15 minutes.
- Blend until smooth using a stick blender. Season.
- Sprinkle with parsley and croutons.
