Pineapple and mint lollies

Use canned pineapples if you can’t find fresh.

  • Makes 8
  • More than 2 hours
 

INGREDIENTS

  • 1 pineapple
  • Handful mint
  • 1 cup (250ml) pineapple juice
  • 2 Tbsp (30ml) castor sugar

METHOD

  1. Peel and dice pineapple.
  2. Purée with mint, pineapple juice and castor sugar.
  3. Pour into lolly moulds, insert sticks and freeze overnight.
  4. Serve.
