Mince and baby marrow calzones

Grated vegetables bulk up mince while adding extra fibre.

INGREDIENTS

  • 1 quantity (about 500g) tomato mince, cooked
  • 4 baby marrows, grated
  • 1kg shop-bought bread dough
  • 1 egg, beaten
  • Green salad, for serving

METHOD

  1. Place tomato mince and grated marrows in a pot. Simmer until heated through.
  2. Divide bread dough into 4 balls on a lightly floured surface. Roll out into 1cm-thick discs.
  3. Preheat oven to 180°C. Place a large baking tray in oven to heat.
  4. Spoon mince onto one half of each disc.
  5. Brush edges with egg and fold closed. Pinch edges with a fork to secure.
  6. Place on a heated baking tray and bake for 30-40 minutes, or until golden.
  7. Serve with a green salad.
