Ingredients

  • 8 pumpkin wedges

  • Glug olive oil

  • ¼ cup (60ml) maple-flavoured syrup

  • Handful thyme sprigs

  • Salt and milled pepper

Method

  1. Preheat oven to 180°C.

  2. Place wedges in a large baking dish.

  3. Drizzle with olive oil and syrup and scatter with thyme leaves.

  4. Season well.

  5. Bake for 45 minutes, until tender. Serve
