Infuse your booze

Whether you buy them or make them, try these trendy herb-infused drinks.

INGREDIENTS

  • Rum, mint and pineapple infusion
  • 2 cups (500ml) rum
  • Handful mint leaves
  • 1 pineapple ring
  •  
  • Gin, fennel and orange infusion
  • 2 cups (500ml) rum
  • ½ baby fennel
  • 2 orange slices
  •  
  • Vodka, rosemary and lavender infusion
  • 2 cups (500ml) vodka
  • 1 sprig rosemary
  • 2 sprigs lavender
  •  
  • Tequila, mint and strawberries infusion
  • 2 cups (500ml) tequila
  • Handful mint leaves
  • Handful strawberries

METHOD

  1. Pour alcohol into a clean jar.
  2. Add herbs and fruit and seal tightly.
  3. Store in a cool, dark place until flavours have infused to the desired taste.
  4. When ready, strain through a sieve, then a coffee filter, and store in the fridge.
