
Indian pork chops with chunky salsa
Chicken works just as well as pork in this yummy summer recipe
- Serves 4
- Less than 30 minutes
INGREDIENTS
- Indian pork chops
- 3 Tbsp (45ml) curry powder
- 1 tsp (5ml) ground cumin
- 1 tsp (5ml) ground coriander
- Pinch nutmeg
- 4 PnP pork chops
- 2 Tbsp (30ml) oil
- Salt and milled pepper
- Chunky salsa
- ½ large papaya, cubed
- ½ pineapple, cubed
- ⅔ cucumber, cubed
- Handful coriander, to serve
METHOD
- Stir spices together in a large bowl.
- Add chops and toss to coat. Set aside for 10 minutes to marinate.
- Heat oil in a large pan.
- Cook chops for 5-6 minutes per side. Season.
- Toss salsa ingredients together.
- Serve chops with salsa.
- *Cook's note* Serve with 4 toasted naan breads to bulk up the meal.
