Hot cross bun crusted leg of lamb

Roasted lamb like never before!

  • Serves 6-8
  • More than 1 hour



  1. Preheat the oven to 175°C.
  2. Place leg of lamb and quartered potatoes in a roasting tray.
  3. Drizzle with olive oil, season and cover with foil.
  4. Roast for 45-60 minutes, depending on how large your leg of lamb is.
  5. Meanwhile, in a food processor, combine the hot cross buns, garlic, apricots and herbs, then pulse into fine crumbs.
  6. Add the oil, salt and lemon peel, pulse until mixture is moist and starting to clump together.
  7. Remove lamb from oven, uncover and carefully press crust onto the lamb.
  8. Return to oven and roast, uncovered, for an additional 30 minutes, or until lamb is cooked to your liking and the crust is golden. Remove potatoes from roast, should they be cooked before lamb is ready.
  9. Allow the meat to rest for 8-10 minutes before slicing.
  10. Serve with your favourite gravy.
