Herb-crumbed Hake Fillets

  • Serves 4



  1. Place the hake fillets onto a lined baking tray
  2. Tear 4 slices of stale bread into chunks and dry out in the oven.
  3. In a food processor, blitz together the parsley, basil and dill, 2 garlic cloves, orange juice, olive oil, and parmesan cheese with bread.
  4. Place herb crumbs on top of fish and press down firmly to coat.
  5. Bake at 200°C for 12 minutes or until fish flakes easily.
  6. Garnish with fresh fennel fronds just before serving.
