Green grain bowl

A filling grain salad with a fresh, herby twist! 

  • Serves 4
  • Less than 1 hour


  • 2 cups (500ml) cooked PnP Livewell bulgur wheat
  • 1 cup (250ml) cooked PnP Livewell pearl barley
  • 1 packet (350g) PnP spiralised baby marrows
  • 1 cup (500ml) PnP frozen peas, blanched
  • 3 rounds PnP Livewell feta, crumbled
  • 1 bunch spring onions, sliced
  • Large handful each of PnP fresh mint and Italian parsley, roughly chopped
  • Dressing:
  • Juice (120ml) of 2 PnP organic lemons
  • Grated peel of 1 PnP organic lemon
  • 1 clove garlic, crushed
  • 1 tsp (5ml) PnP ground cumin
  • Generous glug of olive oil
  • Salt and milled pepper


  1. Toss all salad ingredients in a bowl.
  2. Whisk dressing ingredients together and drizzle over salad.
  3. Allow to stand for 30 minutes so flavours develop, then serve.
