Easter rocky-road brownies

A great way to use up chocolate Easter eggs.

  • Serves 6
  • Less than 30 minutes
 

INGREDIENTS

  • 1 box (500g) PnP brownie mix
  • 1 packet (125g) speckled eggs
  • 5 chocolate-coated marshmallow eggs
  • Handful mini marshmallows
  • 10 Marie biscuits, broken into smaller chunks
  • Ice cream, for serving

METHOD

  1. Prepare brownie mix according to packet instructions.
  2. Add half the speckled eggs and the marshmallow eggs, mini marshmallows and biscuits.
  3. Lightly coat a sheet of foil and an enamel dish with nonstick spray.
  4. Spoon in brownie mixture.
  5. Cover with prepared foil, place over medium coals and add a few coals on top.
  6. Bake for 20 minutes.
  7. Serve with remaining speckled eggs and ice cream.
