Easter bunny cupcakes

The perfect holiday activity for the kids to enjoy.

  • Makes 12
  • Less than 30 minutes


  • ¾ cups (375g) butter, softened
  • 2½ cups (325g) icing sugar, sifted
  • 1-2 tsp (5-10ml) lemon juice
  • 12 PnP queen cakes
  • 2 cups (500g) desiccated coconut
  • 6 white marshmallows
  • 1 packet (80g) strawberry jelly


  1. To make buttercream icing, whisk butter until fluffy and add icing sugar in small quantities.
  2. Whisk until pale and fluffy (scrape the sides of the bowl between whisking) and add lemon juice to taste.
  3. Spread icing onto queen cakes.
  4. Place desiccated coconut in a shallow bowl. Roll iced queen cakes in coconut and set aside.
  5. Using a pair of scissors, snip marshmallows in half, making sure to snip diagonally.
  6. Dip marshmallow halves’ sticky sides into jelly powder to create bunny ears.
  7. Place two ‘bunny ears’ onto each queen cake.
  8. Serve.
