Cumin carrot, beetroot and butternut salad

Raw and fresh salads mean less time cooking!

  • Serves 8
  • Less than 15 minutes
 

INGREDIENTS

  • 2 tsp (10ml) cumin seeds, toasted
  • ¼ cup (60ml) olive oil
  • 2 Tbsp (30ml) rice vinegar
  • 1 tsp (5ml) honey
  • Salt and milled pepper
  • 2 packets (300g each) PnP spiral trio (carrot, beetroot and butternut)
  • Handful coriander, for serving

METHOD

  1. Grind toasted cumin seeds coarsely.
  2. Mix cumin, oil, vinegar and honey together. Season.
  3. Toss spiral trio together with dressing.
  4. Top with coriander and serve.
