Cold creamy chicken salad
A no-cook dinner ready in no time, now that’s a winner!
- Serves 4
- Less than 30 minutes
- 1 small red onion, finely sliced
- Juice (30ml) of 1 lime
- 1 packet (250g) PnP Livewell green pea ditalini
- ½ cup (125ml) yoghurt
- 2 Tbsp (30ml) mayonnaise
- ⅓ cup (80ml) basil pesto
- Juice (30ml) of half a lemon
- Salt and milled pepper
- 2 cups (500ml) diced rotisserie chicken
- Handful rocket
- Place onion in a bowl, add lime juice and gently massage with your fingers to pickle. Set asid
- Cook pasta according to packet instructions. Drain and set aside.
- Mix yoghurt, mayonnaise, pesto, lemon juice and seasoning together.
- Stir pasta, dressing and chicken together.
- Serve topped with a handful of rocket and red onion pickle.
