Cold creamy chicken salad

A no-cook dinner ready in no time, now that’s a winner!

  • Serves 4
  • Less than 30 minutes


  • 1 small red onion, finely sliced
  • Juice (30ml) of 1 lime
  • 1 packet (250g) PnP Livewell green pea ditalini
  • ½ cup (125ml) yoghurt
  • 2 Tbsp (30ml) mayonnaise
  • ⅓ cup (80ml) basil pesto
  • Juice (30ml) of half a lemon
  • Salt and milled pepper
  • 2 cups (500ml) diced rotisserie chicken
  • Handful rocket


  1. Place onion in a bowl, add lime juice and gently massage with your fingers to pickle. Set asid
  2. Cook pasta according to packet instructions. Drain and set aside.
  3. Mix yoghurt, mayonnaise, pesto, lemon juice and seasoning together.
  4. Stir pasta, dressing and chicken together.
  5. Serve topped with a handful of rocket and red onion pickle.
