Cider-roasted chicken breasts wrapped in bacon
This technique helps keep chicken moist and succulent while roasting.
- Serves 4
- Less than 45 minutes
- Season chicken, drizzle with oil and place 2 sage leaves on each.
- Wrap chicken and sage with bacon and place in a roasting pan.
- Pour over vinegar and bake for 20 minutes at 200ºC, until bacon is crispy.
- Add broccoli stems and vine tomatoes, cover with foil and roast for 10 minutes.
- Serve chicken with vegetables and pan juices.
