Cider-roasted chicken breasts wrapped in bacon

This technique helps keep chicken moist and succulent while roasting.

INGREDIENTS

METHOD

  1. Season chicken, drizzle with oil and place 2 sage leaves on each.
  2. Wrap chicken and sage with bacon and place in a roasting pan.
  3. Pour over vinegar and bake for 20 minutes at 200ºC, until bacon is crispy.
  4. Add broccoli stems and vine tomatoes, cover with foil and roast for 10 minutes.
  5. Serve chicken with vegetables and pan juices.
