Blueberry coconut and banana nice cream

A healthy treat to beat the heat.

  • Serves 2
  • More than 2 hours


  • 5 large, ripe bananas
  • 1 punnet (125g) PnP blueberries
  • 2 Tbsp (30ml) honey
  • ¼ cup (60ml) water
  • 1 cup (250ml) coconut cream


  1. Cut bananas into chunks and arrange on a tray lined with baking paper.
  2. Freeze for 3 hours, or until solid.
  3. Place blueberries in a saucepan.
  4. Add honey and water.
  5. Simmer for 5 minutes, or until berries have released their juices.
  6. Allow to cool.
  7. Blitz bananas, blueberry sauce and coconut cream in a blender until smooth.
  8. Refreeze if the mixture is too soft.
  9. Serve in cups or sugar cones with extra blueberries.
