Best-ever lactose-free hot chocolate

INGREDIENTS

  • 1 can (400g) low-fat coconut milk
  • 2-3 Tbsp (30-45ml) cocoa powder
  • ½ Tbsp (7ml) water
  • 1 tsp (5ml) vanilla extract
  • Sugar, for serving
  • Marshmallows, for serving

METHOD

  1. Heat coconut milk in a saucepan.
  2. Mix cocoa powder with water to form a paste and add to coconut milk.
  3. Add vanilla extract and sugar to taste.
  4. Whisk well then pour into mugs and serve topped with marshmallows.
