Bacon and corn potato salad

Dangerously moreish!

  • Serves 6
  • Less than 1 hour
 

INGREDIENTS

METHOD

  1. Slow-fry bacon until crisp. Drain on kitchen paper.
  2. Braai mielies to blister. Remove corn from cobs. Halve potatoes and toss with corn.
  3. Add spring onions, parsley and chives.
  4. Whisk dressing ingredients together and drizzle over salad.
  5. Top salad with bacon and rocket and serve.
