1 packet (500g) fettuccine or linguine pasta
1 packet (250g) streaky bacon, diced
2 cloves garlic, finely chopped
2 extra large eggs
¼ cup (60ml) cream
½ cup (125ml) parmesan cheese, grated + extra for serving
Salt and milled pepper
2 small heads broccoli (about 250g), chopped into small florets, blanched & drained
1 packet (350g) spiralised baby marrow, blanched & drained
Cook pasta according to packet instructions. Set aside.
Heat a large non-stick pan and fry bacon until crispy.
Add garlic and fry for a few seconds.
Beat eggs, cream and parmesan together. Season.
Add hot pasta and vegetables to pan and pour over egg mixture.
Toss for a few seconds to coat pasta, then remove from heat (egg will thicken slightly in residual heat to form a glossy sauce).
Serve with a sprinkling of parmesan.
