Ingredients

  • 1 packet (500g) fettuccine or linguine pasta

  • 1 packet (250g) streaky bacon, diced

  • 2 cloves garlic, finely chopped

  • 2 extra large eggs

  • ¼ cup (60ml) cream

  • ½ cup (125ml) parmesan cheese, grated + extra for serving

  • Salt and milled pepper

  • 2 small heads broccoli (about 250g), chopped into small florets, blanched & drained

  • 1 packet (350g) spiralised baby marrow, blanched & drained

Method

  1. Cook pasta according to packet instructions. Set aside.

  2. Heat a large non-stick pan and fry bacon until crispy.

  3. Add garlic and fry for a few seconds.

  4. Beat eggs, cream and parmesan together. Season.

  5. Add hot pasta and vegetables to pan and pour over egg mixture.

  6. Toss for a few seconds to coat pasta, then remove from heat (egg will thicken slightly in residual heat to form a glossy sauce).

  7. Serve with a sprinkling of parmesan.
