
Pineapple and mint lollies
Use canned pineapples if you can’t find fresh.

- More than 2 hours
INGREDIENTS
- 1 pineapple
- Handful mint
- 1 cup (250ml) pineapple juice
- 2 Tbsp (30ml) castor sugar
METHOD
- Peel and dice pineapple.
- Purée with mint, pineapple juice and castor sugar.
- Pour into lolly moulds, insert sticks and freeze overnight.
- Serve.
