1 cup (90g) rolled oats
½ cup (80g) whole wheat flour
⅓ cup (50g) cake flour
1 pinch castor sugar
1 generous pinch salt
¼ tsp (2ml) bicarbonate of soda
90g chilled butter, diced
2 egg whites
Salt flakes (optional)
A variety of cheese, for serving
Line two baking trays with baking paper.
Blitz oats in a food processor until fine.
Add both flours, sugar, salt and bicarbonate of soda.
While the motor is running, add butter and gently blitz until the mixture resembles breadcrumbs.
Add egg whites and blitz to combine.
Halve mixture and roll out onto a lightly floured surface
Using a cookie cutter, cut rounds of about 6 cm in diameter.
Sprinkle with a few salt flakes and chill for about 30 minutes.
Bake in a preheated 200°C oven for 15 minutes and set aside to cool.
Serve biscuits with a selection of cheese.
