Marmalade pears with ice cream

Use any pear varietal you like.

  • More than 1 hour


  • 2 cups (500ml) cream
  • 4 egg yolks
  • ¼ cup (60g) sugar
  • 2 tsp (10ml) ground cinnamon
  • 1 tub (250ml) fresh cream
  • 4 pears, halved, cored and peeled
  • ½ cup (125ml) marmalade
  • 3cm knob ginger, grated
  • Juice (80ml) of 1 orange
  • 2 Tbsp (30ml) whisky or water


  1. Heat cream over low heat.
  2. Whisk yolks, sugar and cinnamon together in a glass bowl until fluffy.
  3. Slowly whisk egg mixture into hot cream.
  4. Place ice-cream mixture over a pot of simmering water and cook until it coats the back of a spoon.
  5. Pour into a freezer-proof container and cool completely, then freeze.
  6. Arrange pears on a dish.
  7. Mix marmalade, ginger, orange juice and whisky or water and pour over pears.
  8. Bake at 180°C for 30 minutes, or until tender.
  9. Serve with ice cream.
