  1. Place chicken in a roasting pan with red onion.

  2. Season with salt, pepper, lemon juice and grated lemon peel.

  3. Roast at 160°C for 25 minutes.

  4. Parboil rice.

  5. Add rice, chicken stock and green beans to pan.

  6. Roast for another 15-20 minutes until chicken is crispy and brown and beans are tender. Serve.
