
Herby crumbed hake fillets
Tender and flaky.

- Less than 30 minutes
INGREDIENTS
- 4 (600g each) hake fillets/medallions
- 4 slices stale bread
- ¼ cup (60ml) parsley
- ¼ cup (60ml) basil leaves
- ¼ cup (60ml) dill leaves
- 2 garlic cloves
- 1 Tbsp (15ml) orange juice
- 1 Tbsp (15ml) olive oil
- 1 Tbsp (15ml) parmesan
METHOD
- Place hake fillets onto a lined baking tray.
- Tear bread into chunks and dry out in the oven.
- Blitz parsley, basil, dill, garlic, orange juice, oil and parmesan with bread in a food processor.
- Place herb crumb on top of fish and press down firmly to coat.
- Bake at 200°C for 12 minutes or until fish flakes easily.
- Serve.
