Herb-crumbed Hake Fillets
- Serves 4
- Place the hake fillets onto a lined baking tray
- Tear 4 slices of stale bread into chunks and dry out in the oven.
- In a food processor, blitz together the parsley, basil and dill, 2 garlic cloves, orange juice, olive oil, and parmesan cheese with bread.
- Place herb crumbs on top of fish and press down firmly to coat.
- Bake at 200°C for 12 minutes or until fish flakes easily.
- Garnish with fresh fennel fronds just before serving.
