Method

  1. Heat 1 cup (250ml) butter over a high heat until foamy.

  2. Cool in a mixing bowl.

  3. Add mashed bananas, 1 cup (250ml) sugar and beaten eggs and whisk to combine.

  4. Sift cake flour and baking powder and fold through.

  5. Bake in an ovenproof dish at 180°C for 20-25 minutes or until golden.

  6. Heat remaining butter in a large saucepan over a high heat until foamy.

  7. Add remaining sugar and cream and bring to the boil.

  8. Reduce heat and simmer for 5-6 minutes until thickened, stirring frequently.

  9. Pour sauce over hot pudding and allow to soak in before serving.
