  1. Preheat oven to 220°C

  2. Allow butter to soften slightly

  3. Mix butter and pepper together

  4. Place butter on a sheet of cling film and roll into a sausage shape

  5. Refrigerate to set

  6. Toss potatoes in a little oil

  7. Place in a baking dish with rosemary and cover with rock salt

  8. Bake for 40 minutes or until crispy and cooked through

  9. Rub steaks with a little oil and season

  10. Heat a pan until smoking and cook steaks until done to your liking

  11. Cut butter ‘sausage’ into thick slices and use to top steaks

  12. Remove potatoes from salt and serve with steak, watercress and sour cream
