Main Ingredients

  • 2 packets (100g each) smoked mackerel fillets

  • 500g potato salad

  • ½ tub (60g) tzatziki

  • 2 small fennel bulbs, finely shredded

  • 2 spring onions, finely sliced, for topping

Method

  1. Flake mackerel, removing excess skin and bones.

  2. Toss potato salad with tzatziki and fennel.

  3. Fold through mackerel and place into a serving dish.

  4. Scatter over spring onions and serve.
