  1. Preheat oven to 160°C.

  2. Drizzle carrots with oil, season and bake for 20 minutes.

  3. Melt honey, mustard and butter together, pour over carrots, and scatter over almonds.

  4. Bake for 15 minutes, until carrots are tender and almonds are toasted.

  5. Sprinkle with parsley and serve.
