Main Ingredients

  • 8 ripe pears, peeled and cored

  • 2½ cups (625ml) water

  • 90ml sugar

  • 1 cinnamon stick

  • 1 vanilla pod, split lengthways

  • 2 tsp (10ml) mixed spice

  • 4 peppercorns

  • ½ packet (50g) walnuts

  • Cream, whipped, for serving

  • Mint leaves, for serving

Method

  1. Place pears in a saucepan with ¼ cup (60ml) sugar, water, cinnamon, vanilla, mixed spice and peppercorns.

  2. Cover and simmer for 20 minutes until cooked through.

  3. Heat a non-stick pan and toast walnuts and remaining sugar until caramelised.

  4. Cool slightly and roughly chop.

  5. Serve pears scattered with nuts and a dollop of whipped cream, and garnish with a ¼ mint.
