Main Ingredients

  • 16 large PnP mushrooms

  • 4 garlic cloves, chopped

  • Olive oil

  • 1 can (410g) PnP whole peeled tomatoes

  • 4 tsp (20ml) sugar

  • 1 cup (250ml) basil leaves, torn

  • Salt and milled pepper

  • 250g mozzarella, sliced

Method

  1. Preheat oven to 200°C.

  2. Place mushrooms, cap-side down, on a baking tray.

  3. Mix garlic with a little olive oil and spread evenly over each mushroom.

  4. Mix tomatoes, sugar and half the basil leaves together.

  5. Dollop onto mushroom. Season well.

  6. Top with sliced cheese and bake for 20-25 minutes or until golden and cooked through.

  7. Serve scattered with remaining basil.
