Beef Stew

Maize meal


  1. Heat oil in a large pot, brown meat and remove.

  2. Add vegetables, except mushrooms, and fry.

  3. Add tomato paste and garlic. Fry for 3 minutes.

  4. Add beef, tomatoes, stock and wine.

  5. Simmer for 1½ hours.

  6. Add mushrooms and simmer for 30 minutes until meat is tender.

  7. Cool and freeze half the stew. Keep other half warm.

  8. Bring milk and water to the boil. Stir in maize meal and simmer for 20 minutes.

  9. Add corn to cook through.

  10. Stir in butter.

  11. Serve warm stew with maize meal.
