Method

  1. Preheat oven to 200°C.

  2. Combine kofta ingredients and shape into meatballs. Set aside.

  3. Heat a glug of oil in an ovenproof pan. Fry sauce spices and curry leaves

  4. Add curry paste, tomatoes and coconut milk and simmer for 5 minutes.

  5. Add meatballs and bake in oven for 30 minutes, turning once during cooking.

  6. Add lime juice to taste and scatter over coriander.

  7. Serve with cauli-rice.
