Main Ingredients

  • 1 can (410g) butter beans, rinsed

  • 1 cup (250ml) frozen peas, defrosted

  • 1 tub (250g) bocconcini, drained

  • 2 packets (30g each) pea shoots

  • Handful mint leaves, plus extra for dressing

  • ¼ cup (60ml) Italian dressing

Method

  1. Toss together beans, peas, bocconcini, pea shoots and mint leaves

  2. Chop extra mint leaves and mix into dressing.

  3. Dress salad and serve.
