Main Ingredients


  1. Combine cooked rice, grated mozzarella, frozen peas, shredded chicken, whisked eggs, grated baby marrows, zest of 1 lemon and a handful of chopped parsley.

  2. Season.

  3. Pour mixture into the cups of a greased muffin pan.

  4. Bake at 180°C for 15-20 minutes until golden brown.

  5. Serve with greens and a dollop of herbed yoghurt (optional).
