1 glug of PnP Extra Lite Olive Oil
1 pinch of PnP Cinnamon
1 dash of Cerebos Spice Salt and Pepper
175g of Lancewood Mozzarella Ball, grated
1 packet of PnP Rocket Salad (optional)
1 sachet of Rhodes Tomato Paste, (50g)
20g of Huletts White Sugar
1 PnP Garlic Cloves, chopped
5ml of Spice Mecca Origanum
Preheat oven to 200°C.
Slice butternut into 1cm-thick slices.
Toss in oil, cinnamon and seasoning and lay on a baking tray.
Roast for 15-20 minutes or until golden and cooked through.
Mix sauce ingredients together (tomato paste, water, sugar, garlic and origanum) and dollop over butternut.
Scatter over cheese.
Bake for 10 minutes until cheese is melted and golden.
Scatter over rocket, if using, and serve.
