Method

  1. Preheat oven to 200°C.

  2. Slice butternut into 1cm-thick slices.

  3. Toss in oil, cinnamon and seasoning and lay on a baking tray.

  4. Roast for 15-20 minutes or until golden and cooked through.

  5. Mix sauce ingredients together (tomato paste, water, sugar, garlic and origanum) and dollop over butternut.

  6. Scatter over cheese.

  7. Bake for 10 minutes until cheese is melted and golden.

  8. Scatter over rocket, if using, and serve.
