As all cooking appliances vary in performance, the instructions below serve as a guideline only. Cleaning: This product is an agricultural product, which comes to us direct from the farm. Although we carefully clean the product, some stones and debris may be present. Please wash the contents and remove any stones and debris before using. Rinse thoroughly under cold running water and drain. Quick Soaking: Cover beans with 21/2 cups (625 ml) of water for every cup (250 ml) of beans used. Simmer for 5 minutes. Cover and allow to soak for 1 - 2 hours. Overnight Soaking: Cover beans with 21/2 cups (625 ml) of water for every cup (250 ml) of beans used. Soak overnight. In extremely warm weather, soak the beans in the refrigerator to avoid fermentation. Cooking: Drain the soaking water. Add the same amount of boiled water. Do not add salt or bicarbonate of soda to the water. Simmer until soft. Add boiling water if necessary. Total cooking time is ± 21/2 - 3 hours. Add salt to taste. Bicarbonate of soda destroys the vitamins in beans.
